Should i freeze coffee bags to keep them fresh?

If you have not opened your bag of coffee and don't intend to use it for some time, then it is safe to put the bag in the fridge in order to extend its shelf life. Don't ever take it out of the fridge and use it straight away as moisture/condensation will form on the beans and destroy the flavour of your coffee. Leave the bag out for a few hours so that it comes back to room temperature then open the bag. Freezing is an option if you intend to keep beans for a VERY LONG time. Same rule applies when taking the bag out of the freezer. NEVER put an opened bag in the fridge or freezer. Fold the top of your bag over pushing out all the air and put a couple of elastic bands around the bag. Store in an airtight container and place in a cool dark place - ideally at cellar temperature.

Is our coffee bitter?

There are many factors which affect the taste profile of your coffee. Bitterness is something most baristas put in the cup, not from the blend itself. Having said that, there are some instances where bitterness appears particularly if the coffee has been 'baked' or 'scorched'. Not so with Mosaic Coffee. So the most likely culprit is the barista. Bitterness most likely appears if the coffee is ground too fine or the group handle is not thoroughly washed before use, or both.

Why is my coffee weak??

Mosaic Coffee is full in flavour - in fact focus group tested against leading brands in the market and recognised as having lots of coffee flavour. If you are not tasting it you are either not putting enough ground coffee in your filter basket or it is too coarse and pouring too fast. Go finer on the grind until the pour dangles like a thin strand of spaghetti and looks dark brown in colour.
